Bacon and Cheddar Cheese Waffles with Rosemary and Cornmeal















Breakfast doesn’t get much better than these waffles with a cup of coffee. You get your fried egg, bacon, cheese, maple syrup, and waffles—all in one!
If you were ever one of those people who thought eggs tasted good with just a little of the maple syrup from your waffles or pancakes, then you get what I am saying. These waffles are made with cornmeal which gives them a delightful crunch! So good!

Bacon and Cheddar Cheese Waffle Recipe

Ingredients

2 eggs
5 tablespoons butter, melted
1 cup greek low fat yogurt
¾ cup milk
1 cup oat flour*
½ cup all purpose flour
1 cup yellow cornmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon chopped fresh rosemary
1 cup grated cheddar cheese
6 slices bacon, chopped up
eggs and maple syrup for serving


Directions
Mix together butter, eggs, yogurt, and milk. In a different bowl combine the cornmeal, oat flour, all purpose flour, baking powder, baking soda, salt, and rosemary. Mix the wet and dry ingredients together and then fold in the bacon and cheese. Pour batter into a heated and greased waffle maker. Top each waffle with a fried egg and plenty of maple syrup! Enjoy!

Note: Oat flour can easily be made at home by grinding oats in a spice grinder, blender, or food processor. If desired, all purpose flour can be substituted.
